Air fry sweet potato fries at 380°F (195°C) for 14–17 minutes. That converts from the 425°F, 25-minute oven method — reduce the temperature and cut the time by about 20%.
How does the oven conversion work?
| Oven | Air fryer | |
|---|---|---|
| Temperature | 425°F / 220°C | 380°F / 195°C |
| Time | 20–25 min | 14–17 min |
| Turning | Once | Shake twice |
| Preheat | Yes | Yes, 3 min |
How long does it take by Type?
| Type | Temperature | Time |
|---|---|---|
| Frozen, standard cut | 380°F / 195°C | 14–17 min |
| Frozen, crinkle cut | 380°F / 195°C | 15–18 min |
| Frozen, waffle cut | 380°F / 195°C | 12–15 min |
| Fresh cut, ¼ inch | 380°F / 195°C | 16–20 min |
| Fresh cut, ½ inch wedges | 375°F / 190°C | 20–25 min |
Run them cooler than regular fries
Sweet potatoes contain far more sugar than white potatoes, and sugar browns and then burns well before starch does. At 400°F (205°C) the outside darkens while the inside is still firm. 380°F (195°C) gives the interior time to soften.
How much fits in the basket?
| Basket size | Maximum per batch |
|---|---|
| 3–4 qt | 6 oz / 170 g |
| 5–6 qt | 12 oz / 340 g |
| 7–8 qt | 1 lb / 450 g |
| Dual, per drawer | 8 oz / 225 g |
The figures are lower than an oven tray would hold, because an air fryer cooks by moving air around each piece. Anything piled deep blocks that circulation and steams instead of browning. Cook a second batch rather than adding time — the second runs 2–3 minutes faster because the basket is already hot.
Do you need oil?
For frozen, no. For fresh cut, yes — about a tablespoon per pound, tossed thoroughly, or they dry out rather than crisping.
How do you know when it is done?
No safety threshold — cook to texture. Done means browned at the edges with no bend in the middle.
Why are mine soggy in the middle?
Usually crowding, but with fresh-cut sweet potato it is often moisture. Soak cut fries in cold water for 30 minutes, then dry them completely before oiling — the surface starch has to go.

Frequently asked questions
What temperature for sweet potato fries in an air fryer?
380°F, or 195°C, for 14–17 minutes.
Can I use the oven instructions?
Reduce them by about 20% and lower the temperature. A packet saying 25 minutes at 425°F (220°C) converts to roughly 14–17 minutes at 380°F (195°C).
Do I need to preheat?
Three minutes. A hot basket sets the surface quickly, which is what separates browning from steaming.
Do they crisp as much as regular fries?
No. Sweet potatoes have a higher moisture and sugar content and a lower starch content, so they finish softer. This is a property of the vegetable, not a fault in the cooking.

Can I cook a double batch?
Not in one basket. Use two batches, or a dual-basket model with the load split between drawers.
