Air fry boneless chicken breast at 375°F (190°C) for 18–22 minutes, flipping once. That converts from the standard 400°F, 25-minute oven method — reduce the temperature by 25°F (15°C) and the time by 20%. Cook to an internal temperature of 165°F (74°C).
How does the oven conversion work?
| Oven | Air fryer | |
|---|---|---|
| Temperature | 400°F / 200°C | 375°F / 190°C |
| Time | 22–26 min | 18–22 min |
| Turning | Optional | Flip at 10 min |
| Preheat | Yes | Yes, 3 min |
| Rest | 5 min | 5 min |
How long does it take by Weight and Thickness?
Thickness matters more than weight. A flat 8 oz breast cooks faster than a thick 6 oz one, because heat has less distance to travel to the centre.
| Size | Thickness | Temperature | Time |
|---|---|---|---|
| 6 oz / 170 g | ¾ inch | 375°F / 190°C | 15–17 min |
| 8 oz / 225 g | 1 inch | 375°F / 190°C | 18–22 min |
| 10 oz / 285 g | 1¼ inch | 375°F / 190°C | 23–26 min |
| 12 oz / 340 g | 1½ inch | 375°F / 190°C | 26–30 min |
| Pounded even, ½ inch | ½ inch | 375°F / 190°C | 12–14 min |
| Bone-in, split | — | 375°F / 190°C | 25–30 min |
| Frozen, boneless | 1 inch | 360°F / 180°C | 28–32 min |
Frozen breast runs cooler and longer so the outside does not overcook while the centre thaws. It is workable but not ideal — thawed gives a better result.
What internal temperature should it reach?
165°F (74°C), measured at the thickest point. This is not negotiable for poultry and it is the only reliable doneness test — chicken breast has almost no fat, so the window between cooked and dry is narrow, and time alone will not find it.
Pull the breast at 162–163°F (75°C) and let it rest 5 minutes. Carryover heat takes it to 165°F (75°C) while the juices redistribute. Cutting into it immediately loses most of that moisture to the board.
An instant-read thermometer is the single most useful accessory for this cut.
Why does air fried chicken breast come out dry?
Because the cut has very little intramuscular fat and an uneven shape. The thin end reaches 165°F (75°C) several minutes before the thick end, so by the time the centre is safe the tapered end is overcooked.
Two fixes, in order of effect:
- Pound to even thickness. Put the breast between two sheets of baking paper and flatten the thick end to match the thin one. This alone solves most of the problem.
- Brine for 30 minutes in 4 cups water with 2 tablespoons salt. The meat holds noticeably more moisture through cooking. Rinse and pat completely dry before seasoning.
Do you need oil?
A light coating, yes — more than for wings or frozen food. Chicken breast has no skin and little surface fat, so without oil the exterior dries into a pale, papery layer rather than browning. About a teaspoon per breast, rubbed in with the seasoning.
How many fit in the basket?
| Basket size | Breasts per batch |
|---|---|
| 3–4 qt (3–4 L) | 1–2 |
| 5–6 qt (5–6 L) | 2–3 |
| 7–8 qt (7–8 L) | 3–4 |
| Dual basket, per drawer | 2 |
They must not touch. Breasts pressed against each other cook unevenly at the contact point and stay pale there, and the trapped area can lag several degrees behind on internal temperature — which matters for a cut with a safety threshold.
Do you flip it?
Once, at the halfway point. Chicken breast benefits from flipping more than most foods because it sits flat and heavy in the basket, so the underside gets little air movement.

Frequently asked questions
What temperature for chicken breast in an air fryer?
375°F, or 190°C, for 18–22 minutes for a standard 8 oz breast, flipping once.
What internal temperature is chicken breast done at?
165°F (74°C) at the thickest point. Pull at 162°F and rest 5 minutes to reach it through carryover.
Can I cook chicken breast from frozen?
Yes — 360°F (180°C) for 28–32 minutes. Check the temperature in two places, since frozen pieces cook less evenly.
Why is mine rubbery?
Usually overcooked rather than undercooked. Chicken breast passes from juicy to tight within a few degrees above 165°F (75°C), which is why the thermometer matters more than the timer.
Should I cover it in foil?
No. Foil blocks the air circulation the appliance depends on, and loose foil can lift into the heating element.
Can I cook chicken and vegetables together?
Yes, if the vegetables suit 375°F (190°C) and are cut small enough to finish in the same window. Add quick vegetables like peppers or courgette at the halfway flip rather than at the start.
