Air fry a medium baked potato at 375°F (190°C) for 40–45 minutes, turning once. That converts from the standard 400°F, 55-minute oven method — reduce the temperature by 25°F (15°C) and the time by 20%. The interior should reach 205–210°F (96–99°C) for a fluffy texture.
How does the oven conversion work?
| Oven | Air fryer | |
|---|---|---|
| Temperature | 400°F / 200°C | 375°F / 190°C |
| Time | 50–60 min | 40–45 min |
| Turning | None | Once at 20 min |
| Preheat | Yes | Yes, 3 min |
How long does it take by Size?
| Potato size | Weight | Temperature | Time |
|---|---|---|---|
| Small | 5–6 oz / 150 g | 375°F / 190°C | 30–35 min |
| Medium | 7–9 oz / 225 g | 375°F / 190°C | 40–45 min |
| Large | 10–12 oz / 320 g | 375°F / 190°C | 48–55 min |
| Extra large | 14 oz+ / 400 g | 375°F / 190°C | 55–65 min |
| Sweet potato, medium | 8 oz / 225 g | 375°F / 190°C | 35–40 min |
| Baby / new potatoes | — | 400°F / 200°C | 15–20 min |
| Halved, cut side down | Medium | 400°F / 200°C | 25–30 min |
Halving the potato cuts the time by roughly a third and gives a crisp cut face, at the cost of the intact skin.
The faster method — use both appliances
This is the single most useful technique on this page. A whole air fried potato takes 40–45 minutes; the combination takes about 20 and produces a better skin than either method alone.
- Microwave the pierced potato for 5–6 minutes, turning halfway.
- Oil and salt the skin.
- Air fry at 400°F (200°C) for 10–15 minutes, turning once.
The microwave cooks the dense interior quickly, which is what takes the time; the air fryer does what a microwave cannot, which is crisp the skin.
What internal temperature should it reach?
205–210°F (96–99°C), which is higher than most people expect and considerably above any safety threshold. Potatoes are not about food safety — that temperature is where the starch granules fully gelatinise and the flesh turns fluffy rather than waxy.
A potato pulled at 190°F (90°C) is cooked and edible but noticeably dense. The last twenty degrees are what people mean by a good baked potato.
A skewer should slide in with no resistance at all.
Do you need to pierce it?
Yes, four or five times with a fork. Steam builds inside the skin as the moisture heats, and a sealed potato can split violently — the fan and the confined basket make the mess worse than in an oven.
Do you need oil and salt?
Rub the skin lightly with oil and roll it in coarse salt before cooking. The oil conducts heat into the skin and helps it crisp; the salt draws surface moisture out and seasons it.
This matters more in an air fryer than in an oven, because the circulating air produces a noticeably crisper skin when there is oil on it and a noticeably tougher, leathery one when there is not.
Do not wrap in foil
Foil steams the potato and produces a soft, damp skin, which defeats the point of using an air fryer at all. It also blocks the airflow the appliance depends on. If a recipe tells you to wrap, it was written for an oven and for a different result.
How many fit?
| Basket size | Medium potatoes |
|---|---|
| 3–4 qt (3–4 L) | 2 |
| 5–6 qt (5–6 L) | 3–4 |
| 7–8 qt (7–8 L) | 5–6 |
| Dual basket, per drawer | 2–3 |
They should not touch. Potatoes in contact stay pale and soft where they meet, and the cook time extends because air cannot reach those faces.

Frequently asked questions
What temperature for a baked potato in an air fryer?
375°F, or 190°C, for 40–45 minutes for a medium potato, turning once.
Can I speed it up?
Yes — microwave for 5–6 minutes first, then air fry at 400°F (205°C) for 10–15 minutes. Total time around 20 minutes with a better skin.
What internal temperature should a baked potato reach?
205–210°F (96–99°C). This is a texture threshold, not a safety one — it is where the starch fully gelatinises.
Do I need to wrap it in foil?
No. Foil steams the skin and blocks airflow. It works against everything an air fryer does well.
Why is my skin tough rather than crisp?
Not enough oil, or the potato was wet when it went in. Dry it thoroughly, then oil and salt the skin.
Can I cook sweet potatoes the same way?
Yes, at the same temperature but 5 minutes less. Their higher sugar content browns faster, so watch the skin.
