Preheating an air fryer for 3 minutes is required for any food that needs a crisp exterior, and optional for slow bakes and covered dishes. Skipping it on a recipe that assumed a preheated oven adds 2–3 minutes to the converted time.
This page covers what preheating changes, how long it takes on each type of unit, which foods need it, and why some manufacturers say it is unnecessary.
What does preheating change?
The temperature of the basket surface at the moment the food lands on it. A hot surface begins driving off surface moisture immediately; a cold one lets the food’s own moisture soak into any coating before browning can start.
This matters most for breaded and frozen foods, where the coating is the entire texture of the dish, and least for anything that cooks long enough for the difference to wash out.
How long does an air fryer take to preheat?
| Type | Preheat time |
|---|---|
| Basket model, 3–6 qt | 2–3 min |
| Basket model, 7–10 qt | 3–4 min |
| Dual basket | 3 min per drawer |
| Air fryer oven | 4–5 min |
| Conventional oven, for comparison | 12–15 min |
The short preheat is one of the appliance’s real advantages, and it is why an air fryer beats an oven on total elapsed time even where the cooking time is similar.
Which foods need preheating?
Anything that needs to crisp: frozen fries, wings, breaded items, roasted vegetables, pizza, hash browns, and anything with a coating.
Anything that does not need a crisp exterior can go into a cold basket: slow bakes, covered dishes, and reheating where texture is not the point.
Steak is the exception among proteins — preheat for 5 minutes rather than 3, because the basket surface itself is doing part of the browning.
Why do some manufacturers say preheating is unnecessary?
Because their units reach temperature during the first two minutes of any cook, and for a 30-minute recipe that interval is immaterial. The advice is reasonable for long cooks and wrong for short ones — a 4-minute reheat in a cold basket spends most of its time below temperature.
Does preheating change the converted time?
No, if you preheat. The conversion assumes the cavity is at temperature when the food goes in, exactly as an oven recipe does.
If you skip preheating, add 2–3 minutes to the converted time and expect a softer surface.
Should you preheat with parchment in the basket?
Never. An empty basket has nothing holding the paper down, and the fan will lift it into the heating element. Put the paper in with the food already on it.

Frequently asked questions
Do you need to preheat an air fryer?
For crisp foods, yes — 3 minutes. For slow bakes and covered dishes it is optional.
How long does an air fryer take to preheat?
Two to three minutes for most basket models, four to five for oven-style units.
What happens if I skip preheating?
Add 2–3 minutes to the converted time and expect a less crisp surface.
Can I preheat with parchment paper inside?
No. The fan lifts loose paper into the heating element. Add the paper with the food on it.
