Air fry shrimp at 400°F (200°C) for 6–8 minutes, shaking once. That converts from the 400°F, 9-minute oven method. Shrimp are done when opaque throughout — the USDA target for shellfish is 145°F (63°C).
How does the oven conversion work?
| Oven | Air fryer | |
|---|---|---|
| Temperature | 400°F / 200°C | 400°F / 200°C |
| Time, large | 8–10 min | 6–8 min |
| Turning | Once | Shake at 4 min |
| Preheat | Yes | Yes, 3 min |
How long does it take by Size?
Shrimp sizing is given as a count per pound — the lower the number, the larger the shrimp.
| Size | Count per lb | Temperature | Time |
|---|---|---|---|
| Small | 51–60 | 400°F / 200°C | 4–5 min |
| Medium | 41–50 | 400°F / 200°C | 5–6 min |
| Large | 31–40 | 400°F / 200°C | 6–8 min |
| Extra large | 26–30 | 400°F / 200°C | 7–9 min |
| Jumbo | 21–25 | 400°F / 200°C | 8–10 min |
| Frozen, raw, large | 31–40 | 400°F / 200°C | 8–10 min |
| Breaded / coconut shrimp | — | 375°F / 190°C | 8–10 min |
| Pre-cooked, reheating | — | 350°F / 175°C | 3–4 min |
How does the shape test work?
This is more reliable than a thermometer, because shrimp are too small to probe accurately.
- C-shape — cooked correctly. The shrimp has curled into a loose C and turned opaque pink.
- O-shape — overcooked. The tail has curled around to meet the head, and the texture will be rubbery.
A shrimp goes from perfect to ruined in under a minute at 400°F (205°C). Check at the earliest time in the range, every time.
Why do shrimp go rubbery?
They contain very little connective tissue and cook extremely fast, so the margin is narrow — often thirty to sixty seconds. Overcooked shrimp tighten and squeak against the teeth.
Set a timer for the shortest time in the range, look at the shape, and add thirty seconds at a time if needed. Do not walk away.
Do you need oil?
A light toss, yes. Shrimp have almost no fat and dry out quickly at the surface. About two teaspoons per pound, tossed with the seasoning, keeps them from going leathery.
Fresh or frozen?
Frozen works well and is often better quality than what is sold as fresh, since most shrimp is frozen at sea. Cook from frozen at the same temperature with 2 minutes added, or thaw under cold running water for 5 minutes for a more even result.
Pat completely dry before cooking either way. Surface water steams and prevents any browning.
How many fit?
| Basket size | Shrimp |
|---|---|
| 3–4 qt (3–4 L) | 8 oz / 225 g |
| 5–6 qt (5–6 L) | 1 lb / 450 g |
| 7–8 qt (7–8 L) | 1.5 lb / 675 g |
| Dual basket, per drawer | 10 oz / 285 g |
A single layer. Piled shrimp steam each other and the ones underneath go grey rather than pink.
Shell on or off?
Off, for most purposes — the shell blocks seasoning and makes the shrimp awkward to eat. Shell-on shrimp do stay slightly juicier and take about a minute longer.
Devein large shrimp; on small ones it makes little difference.

Frequently asked questions
What temperature for shrimp in an air fryer?
400°F, or 200°C, for 6–8 minutes for large shrimp, shaking once.
How do I know when shrimp are done?
They turn opaque pink and curl into a loose C. A tight O-shape means overcooked.
Can I cook shrimp from frozen?
Yes — same temperature, 2 minutes longer. Pat dry once the surface thaws.
Why are mine rubbery?
Overcooked, almost certainly. Shrimp pass from done to tough in under a minute at 400°F (205°C).
Do I need to thaw first?
Not necessarily, though thawing gives a more even result. Never thaw at room temperature.
Can I cook shrimp and vegetables together?
Only if the vegetables are pre-cooked or very quick. Most take two to three times as long, so add the shrimp for the final 6 minutes.
