How Long to Air Fry Salmon: Temperature, Time, and Conversion Chart

Air fry salmon at 400°F (200°C) for 9–11 minutes for a 1-inch fillet, skin side down, without flipping. That converts from the standard 400°F, 13-minute oven method. The USDA recommends cooking fish to 145°F (63°C).

How does the oven conversion work?

Oven Air fryer
Temperature 400°F / 200°C 400°F / 200°C
Time 12–15 min 9–11 min
Turning None None
Preheat Yes Yes, 3 min

Salmon keeps the oven temperature rather than dropping 25°F (-5°C), because the cook is short enough that the surface effect has little time to run ahead of the centre. The time reduction alone is sufficient.

How long does it take by Thickness?

Thickness decides everything here. Weight is a poor guide, because a wide thin fillet and a narrow thick one can weigh the same and need very different times.

Thickness Temperature Time
½ inch / 1.3 cm 400°F / 200°C 6–8 min
¾ inch / 2 cm 400°F / 200°C 8–9 min
1 inch / 2.5 cm 400°F / 200°C 9–11 min
1¼ inch / 3 cm 400°F / 200°C 11–13 min
1½ inch / 4 cm 390°F / 195°C 13–15 min
Frozen fillet, 1 inch 380°F / 195°C 14–17 min
Whole side, 2 lb 375°F / 190°C 18–22 min

Thicker fillets drop to a lower temperature so the exterior does not overcook before the centre reaches temperature.

What internal temperature should it reach?

The USDA recommends 145°F (63°C) for fish, at which point the flesh is opaque throughout and flakes readily.

Many cooks and restaurants prefer salmon at 125–130°F (52–54°C) for a moister, medium result, on the basis that it is a fatty fish that firms considerably in the last few degrees. That is a personal judgement about texture against the official guidance — worth knowing that the difference exists, and worth being more cautious with fish of uncertain freshness, or if you are pregnant, elderly, very young, or immunocompromised.

Whichever target you choose, an instant-read thermometer is more reliable than time, because fillet thickness varies so much.

Skin on or off?

Skin on, skin side down, and do not flip. The skin acts as a barrier between the flesh and the hot basket floor, which prevents the underside overcooking, and it lifts away cleanly afterwards if you do not want to eat it.

For crisp skin, dry it thoroughly, oil it lightly, and cook skin side up for the final 3 minutes.

Why does white stuff come out of my salmon?

That is albumin, a protein that coagulates and is pushed to the surface as the muscle fibres contract. It is harmless but it looks unappealing, and it signals the fish is cooking fast or going past your target.

Reduce it by lowering the temperature to 375°F (190°C) and extending the time, or by brining the fillet for 10 minutes in a tablespoon of salt dissolved in two cups of water before cooking.

Should you use parchment or foil?

Perforated parchment makes cleanup easier and stops delicate fillets sticking. Never preheat with loose paper in an empty basket — the fan lifts it into the heating element. Foil blocks airflow and is not worth using here.

How many fillets fit?

Basket size Fillets
3–4 qt (3–4 L) 1–2
5–6 qt (5–6 L) 2–3
7–8 qt (7–8 L) 3–4
Dual basket, per drawer 2

They must not overlap. Salmon is delicate enough that separating stuck fillets afterwards will break them.

Can you cook it from frozen?

Yes, and it works better than with most proteins. 380°F (195°C) for 14–17 minutes, no thawing. Season after the first 5 minutes once the surface has thawed enough for seasoning to adhere.

Frequently asked questions

What temperature for salmon in an air fryer?
400°F, or 200°C, for 9–11 minutes for a 1-inch fillet, skin side down.

What internal temperature should salmon reach?
The USDA recommends 145°F (63°C). Many cooks prefer 125–130°F for a medium result — a texture preference against official guidance.

Do I flip salmon in an air fryer?
No. Circulating air cooks both sides, and flipping breaks the fillet.

How do I know it’s done without a thermometer?
Press the thickest part with a fork — the flesh should separate into flakes and look opaque rather than translucent. This is less reliable than a thermometer.

Can I cook salmon and vegetables together?
Yes, if the vegetables are cut small and suit 400°F (205°C). Start them 5 minutes before the salmon goes in, since most take longer.

Why is my salmon dry?
Almost always overcooked. Salmon loses moisture quickly past 145°F (65°C), and a thin fillet can pass its target in under a minute at 400°F (205°C).
