Deep Fryer to Air Fryer Conversion: Temperature, Time, and Conversion Chart

To convert a deep fryer recipe to an air fryer, set the air fryer 25°F (15°C) above the oil temperature and multiply the frying time by about 3. Fries deep fried at 375°F for 4 minutes go into the air fryer at 400°F for 12–15 minutes.

Rough rule: multiply by 3 for most foods, 4–5 for potatoes.

The multiplier is large because oil is a far better heat carrier than air. Hot oil is in direct contact with every part of the surface and delivers energy dramatically faster than moving air can. An air fryer cannot close that gap, so the conversion trades time for the absence of oil rather than matching the process.

Why does this take so much longer than deep frying?

Because air carries a fraction of the heat that oil does at the same temperature. Oil surrounds the food completely and transfers energy on contact; air has to move fast to deliver a small amount. Three times the duration is the price of using a twentieth of the fat.

Do I still need oil?

Yes, a little, and it matters more here than in any other conversion. Spray or toss food with about a teaspoon of oil per portion. Without it, breadcrumb coatings stay pale and floury rather than turning golden, because browning reactions need fat to carry heat into the surface. Use a refillable pump sprayer rather than aerosol cans, which contain propellants that degrade non-stick baskets.

Which deep fryer recipes cannot be converted?

Anything in a wet batter. Beer batter, tempura and thin flour-and-water coatings rely on oil to set them instantly on contact — in an air fryer they drip through the basket before they firm up, and you get a bare piece of food sitting in a puddle. Convert only to a dry coating: flour, egg wash, then breadcrumbs or panko.

Also skip anything that needs to float or move freely in oil, and doughnuts made from wet yeasted dough, which deform against the basket.

What about double frying?

Replace it with a single longer cook rather than trying to reproduce the two stages. Double frying exists to cook the interior at a lower oil temperature and then crisp the exterior at a higher one. An air fryer's slower heat transfer does both at once. For fresh-cut fries, soak in cold water for 30 minutes, dry thoroughly, toss in oil, then air fry at 400°F (205°C) for 18–22 minutes with two shakes.

Should I preheat?

Always, for this conversion. Deep frying starts with the food hitting oil already at temperature, and a cold air fryer basket lets coatings absorb moisture before the surface sets. Three minutes is enough.

How much fat does this actually save?

Deep frying leaves food carrying meaningful absorbed oil; air frying with a teaspoon of sprayed oil per portion leaves a fraction of that. The exact difference depends heavily on the food, the coating and the oil temperature, so treat it as substantially less rather than a specific figure.

Frequently asked questions

What temperature replaces 350°F (175°C) oil?
375°F (190°C) in the air fryer, with roughly triple the time. Add 25°F (15°C) to the oil temperature.

How long do you air fry something that deep fries in 4 minutes?
About 12 minutes for most breaded foods, 15–18 for potatoes. Check at two-thirds of the estimate on the first attempt.

Will it taste the same?
Close on breaded and frozen foods. Noticeably different on battered foods and anything where absorbed oil is part of the flavour — doughnuts and fish and chips are the usual disappointments.

Can I reuse the same seasoning and coating?
Yes, with one change: add the oil to the coating stage rather than relying on the cooking medium. Toss breadcrumbs with a little oil before coating, or spray after.

Do I need to shake?
More than with a deep fryer, which agitates food naturally. Shake at the one-third and two-thirds points for anything in a loose layer.
