Air fry frozen french fries at 400°F (200°C) for 15–18 minutes, shaking twice. That converts from the 425°F, 22-minute oven instructions on most packets — reduce the temperature by 25°F (15°C) and the time by 20%.
How does the oven conversion work?
| Oven (packet) | Air fryer | |
|---|---|---|
| Temperature | 425°F / 220°C | 400°F / 200°C |
| Time | 20–25 min | 15–18 min |
| Turning | Once | Shake at 6 and 12 min |
| Preheat | Yes | Yes, 3 min |
How long does it take by Cut?
Cut matters more than brand. Thinner fries have more surface area per gram and finish considerably sooner.
| Cut | Temperature | Time |
|---|---|---|
| Shoestring / skinny | 400°F / 200°C | 10–13 min |
| Standard straight cut | 400°F / 200°C | 15–18 min |
| Crinkle cut | 400°F / 200°C | 16–19 min |
| Steak fries / chips | 400°F / 200°C | 18–22 min |
| Waffle fries | 400°F / 200°C | 12–15 min |
| Sweet potato fries | 380°F / 195°C | 14–17 min |
| Curly fries | 400°F / 200°C | 12–15 min |
Sweet potato fries run cooler because their sugar content browns faster — at 400°F (205°C) the outside darkens before the inside softens.
How much fits in the basket?
This is the variable that decides whether the conversion works, and it is the one most people get wrong.
| Basket size | Maximum for crisp results |
|---|---|
| 3–4 qt (3–4 L) | 8 oz / 225 g |
| 5–6 qt (5–6 L) | 1 lb / 450 g |
| 7–8 qt (7–8 L) | 1.5 lb / 675 g |
| Dual basket, per drawer | 12 oz / 340 g |
Those figures are lower than the packet suggests, because a packet assumes a flat oven tray. An air fryer cooks by moving air around each piece — fries piled two or three deep block that circulation and steam each other. The result is pale, limp fries that people blame on the appliance.
If you have more than the basket takes, cook in two batches. The second batch takes 2–3 minutes less because the basket is already hot.
Do you need oil?
Not usually. Frozen fries are par-fried before freezing, so they carry enough oil to crisp. A light spray helps on lower-fat or oven-baked varieties, which are formulated with less.
Use a refillable pump sprayer rather than an aerosol can. Aerosol cooking sprays contain propellants and lecithin that build up on non-stick baskets and degrade the coating over time.
Should you thaw them first?
No. Cook from frozen, always. Thawed fries release surface moisture that has to evaporate before browning can start, and they turn soft in the middle. This is the one instruction that is identical between the oven and the air fryer.
Why are my air fryer fries soggy?
In order of frequency: the basket was overloaded, the fries were thawed, or the appliance was not preheated. Overloading is by far the most common. If your fries came out pale and bendy after the full time, halve the quantity and try again before changing anything else.
Do you shake or not?
Shake twice — at roughly one-third and two-thirds through. An air fryer has a hot zone near the fan, so the pieces on top brown faster than those underneath. Shaking is more important here than turning is in an oven, where a stationary tray heats fairly evenly.
What internal temperature should they reach?
There is no safety threshold for potatoes — cook to texture, not temperature. Done means golden with visible dry edges and no give when pressed. If in doubt, take one out and taste it.
Reheating leftover fries
400°F (200°C) for 3–4 minutes brings cold fries back close to fresh, which is something a microwave cannot do at all. Spread them in a single layer and do not add oil.

Frequently asked questions
What temperature should frozen fries be in an air fryer?
400°F, or 200°C. This converts from the 425°F oven instruction on most packets.
How long do frozen fries take in an air fryer?
15–18 minutes for standard cut, shaking twice. Thin cuts take 10–13 minutes, steak fries 18–22.
Can I use the oven time from the packet?
Not directly — reduce it by 20%. A packet saying 22 minutes at 425°F (220°C) converts to about 17 minutes at 400°F (205°C).
Do I need to preheat?
Yes, 3 minutes. Frozen food benefits more from a hot basket than fresh food does, because the surface needs to dry before it can brown.
Can I cook two bags at once?
Only in a dual-basket unit, and then one bag per drawer. Doubling up in a single basket produces steamed fries regardless of added time.
Why do mine burn on the edges but stay soft in the middle?
The temperature is too high for the cut. Drop to 380°F (195°C) and add 3 minutes — thicker cuts need longer at lower heat.
